Now on to the Cobb, we used...
1 head of red leaf lettuce
1 head of romain lettuce
1 can black beans (drained)
1 can yellow corn ( drained)
1 diced tomato
1 cut up avacado
4 hard boiled eggs
4 peices of bacon
2 chicken breasts ( Hunter seasoned the chicken with salt, pepper, and blackening season and it was delish!)
Tortilla strips
Dressing - Hunter spurced up ranch dressing out of the bottle by adding the following to it: sorry we don't have exact measurements he just adds and taste tests :)
chili sauce
lemon juice
cajun seasoning
buttermilk.
1. Make your dressing and refigerate until your ready to use.

2. Hard boil your eggs
3. Wash and cut all your lettuce and place in a large bowl

3.Drain black beans and corn and place to the side
4. Cut up your avacodo and tomato

5. Season your chicken breasts as you'd like and cook them. ( We just cooked them in a skillet in a little butter)
6. Cook bacon in same skillet while your chicken cools
7. Peel and slice your eggs
8. Cut up chicken and bacon

9. Assemble salad - Hunter layered it with lettuce, dressing, corn, beans, tomato, egg, avacodo, chicken, bacon, tortillas strips, then more dressing at the end.


Wala! Yes Hunter has portion control issues when he serves meals! :)

And here's Jake eating his dessert while we ate our dinner! He's a little wet because he had just gotten a bath after a fun afternoon of swimming in Lake Norman!

Hope you all had a great weekend! We got zero, nada, zilch done on the shed but had fun trying out the new mexican restaurant in town, watching the Hokies win, and taking Jake to the lake. Gotta have priorities :)xoxo
